Eggplant Pasta ingredients list:
1 large onion.
1 chili pepper.
2 tins of peeled tomatoes.
1 ½ tablespoons of olive oil.
Fresh garlic, crushed.
Dried herbs (for example: capsicum, oregano, rosemary, parsley, thyme etc).
Salt, to taste.
Instructions for Eggplant Pasta:
Slice the eggplant and cover in the salt. Leave for about 45 mins.
Rinse salt, then squeeze until almost dry.
Cut into chip size pieces and fry in olive oil.
Add the large onion and cook for about 5 minutes.
Add all of the other ingredients and simmer for 25 minutes.
Cook your pasta.
Serve the mixture with your pasta.
